4 Delicious and Fresh Mie Kocok Recipes

Mie kocok consist of a combination of chewy wet noodles and savory broth. Plus the presence of cow leg pieces or cowhide and delicious cow's feet make shaken noodles so special.

No need to go all the way to Bandung to taste shaken noodles, you can try to make beef leg shaken noodles at home with the following recipes.

1. Fresh Shaken Noodle Recipe

Want to make a fresh shaken noodle recipe? Here are the recipes that can be followed.

Material:

- 200 grams of dried egg noodles

- 100 grams of bean sprouts, remove the tail

- 250 grams of beef

- 3 cm ginger, bruise

Puree:

- 4 shallots

- 4 cloves garlic

- 1/2 tsp pepper powder

- 1 tbsp salt

- 1/2 tsp granulated sugar

Complementary:

- White crackers

- Sliced celery leaves

- Sliced leeks

- Fried onions for sprinkling

- Cayenne pepper sambal

How to Make:

1. Boil the noodles until cooked. Remove and set aside.

2. Brew bean sprouts in hot water. Drain and set aside.

3. Boil the beef until tender, then remove.

4. Set aside the meat stew broth for gravy.

5. Cut the beef into cubes, then put it back in the boiled water.

6. Add the ginger, cook over low heat until it boils.

7. Sauté the spices finely until fragrant, then put them in the broth.

8. Prepare a serving bowl. Add the noodles and bean sprouts, then flush with the gravy and the beef pieces.

2. Recipe of Mie Kocok Bandung

Mie kocok is a famous culinary of Bandung. The name of the shaken noodle itself comes from the way it is made. If you have never tried it do not worry, we make our own shaken noodle recipe.

Material:

- 1 cow's foot, washed clean

- 3 liters of water

- 500 gr of flat wet noodles, wash with clean water

- 250 gr bean sprouts, wash with clean water

- 5 shallots, puree

- 5 cloves garlic, puree

- 2 bay leaf leaves

- 5 leaves of orange

- 3 cm ginger

- 1.5 tsp pepper powder

- 3 tbsp salt

- 1 tbsp sugar

Complementary materials:

- Fried shallots, to taste

- Sliced leeks, to taste

- Sliced celery, to taste

- Lime slices, to taste

- Sambal, to taste

How to make:

1. Boil the legs of the cow until tender. Remove and drain (keep the remaining water of the decoction). Cut into small pieces to taste. Put it back in the boiled water. Bring to the boil again and set aside.

2. Heat the oil. Sauté the shallots and garlic until fragrant. Remove then pour into a saucepan of beef leg stew. Mix well.

3. Add the ginger, orange leaves, bay leaves, salt, sugar, and pepper. Mix well and cook until boiling. Correct the taste. Put out the fire.

4. Arrange the noodles and toge in a bowl. Give the cow a leg. Flush with gravy. Sprinkle fried shallots, sliced leeks, and celery slices.

5. Shaken noodles are ready to be served to families.

 

3. Homemade Shaken Noodle Recipe

Material:

- 500 grams of wet noodles

- 1 ounce raw bean sprouts

- Celery to taste

- 1 cow's foot (approx. 1 kilogram)

- 1.5 liters of water

Spices:

4 bay leaf leaves

3 sticks of lemongrass

2 segments ginger

Seasonings are smooth:

- 5 cloves garlic

- 5 shallots

- Flavoring to taste

How to make:

1. First, prepare the legs of the cow. Cook in a presto pan for an hour, no need to season. When cooked, remove and drain.

2. Prepare a saucepan, bring 1.5 liters of water to a boil. Then put the bay leaf, crushed lemongrass, and pieces of ginger that have been crushed into the water.

3. Put the legs of the beef that has been pressed earlier, then boil until cooked and tender.

4. While waiting for the legs of the cow to ripen, prepare a smooth seasoning. Thinly slice the shallots and garlic. Fry until fragrant, turn off the heat and drain.

5. Puree the shallots and garlic can use a ulekan or blender. After that put in the stew of the legs of the cow. Mix well.

6. Give the flavoring to taste.

7. Serve in a bowl with the wet noodles and a sprinkling of celery leaves.

 

4. Recipe of Medan Whipped Noodles

Although mie kocok is a typical culinary of Bandung, but there are also recipes of Medan-style shaken noodles that can be tried.

Material:

- 500 gr noodle sticks

- 200 gr bean sprouts, siangi and clean

- 3 boiled chicken eggs, cut into small pieces

- 300 gr of boiled chicken fillets, then shredded

- 50 gr ebi, soaked then roasted and pounded until smooth

Gravy ingredients:

- 1,250 ml shrimp broth

- 1 tsp pepper powder

- 2 tsp salt

- 3 cloves

- 1/4 grain nutmeg

- 1 tbsp sweet soy sauce

- 2 tbsp vegetable oil

- 1/2 segment ginger, finely chopped

- 300 gr shrimp, clean the skin and tail

- 3 tbsp fried garlic, puree

- 5 tbsp fried shallots, puree

- 1/2 tbsp starch, dissolved with a little water

Complementary materials:

- Leeks to taste, finely sliced

- Celery to taste finely sliced

- Fried shallots to taste

- Red crackers, ready to eat               

How to make:

1. Prepare a saucepan then put the broth water in it.

2. Bring the broth to a boil by adding pepper, salt, cloves, nutmeg and sweet soy sauce to it.

3. Prepare the pan and oil then pan.

4. Sauté the ginger and prawns until the prawns change color. After discoloration then remove the shrimp and put it in the broth.

5. Don't forget to add other seasonings to the broth, then bring to the boil again.

6. Pour the starch solution into the broth, then stir until thick. Once thick, remove the broth.

1. Boil your noodles using hot water until cooked.

2. Prepare a serving bowl and arrange the noodles, bean sprouts, and chicken in a serving bowl.

3. Pour the gravy along with the contents slowly.
